Tabouli to go with those Wings....


Tabouli Salad
1 cup tabouli salad mix (bulgur wheat with dried herbs and spices) – About ½ a bag
1 can (14oz) fire roasted diced tomatoes (Hunts) or use tomato or V8 juice
½ can water
Soak tabouli mix with diced tomatoes and water for at least 2 hours; then add
1 cucumber, seeded and chopped
1 red pepper and 1 Anaheim pepper, seeded and chopped
1/2 sweet onion chopped (or use 1 cup diced green onions)
1 cup fresh chopped parsley or more
1 small clove garlic, minced (optional)
Dressing:
1/4 cup fresh lemon juice (or combo or lime juice and red wine vinegar)
1/4 cup extra virgin olive oil or salad oil
1/2 T red pepper flakes
salt to taste
pinch of sugar
Mix together and add additional moisture if needed. Refrigerate a couple of hours before serving.
